Víctor Barrera and his family run Finca El Tesoro, a six-hectare farm in Huila, Colombia. The roaster describes combining several days of harvested cherries for fermentation, followed by washing and about 30 days of drying in a Casa Elba drying house.
The Colombian operates coffee shops and a roastery in Edmonton. Founded by Santiago and Kristin, the business began selling roasted coffee at farmers’ markets in 2017 and opened a café with an on-site roastery in 2018.
